Purpose
To ensure proper sanitation standards are maintained if the dish machine is temporarily unavailable.
Scope
Applies to all dishes and kitchen staff.
Procedure

When the Dish Machine Fails
- Immediately notify the Kitchen Manager or General Manager.
- Place an “OUT OF SERVICE” sign on the machine.
- Contact EcoLab (or approved service provider) for repair.

Switch to 3-Bay Sink Method
The 3-bay sink must be used until the dish machine is operational again.

Wash |
Use hot, soapy water (110°F minimum). Scrub all surfaces to remove debris and grease. |

Rinse |
Use clean, warm water to rinse off soap residue. Change water frequently. |
| Bay 3 |
Sanitize |
Fill with approved EcoLab sanitizer at the proper concentration (check with test strips). Items must soak at least 1 minute. |
- Drying
- Air-dry all dishes, utensils, and pans. Do not towel dry.
- Store only when fully dry to prevent bacterial growth.
- Verification
- Concentration should be checked every 2 hours using test strips.
- Results logged in the Sanitizer Test Record on the ThermoWorks app.
- Resuming Normal Operation
- Once EcoLab confirms repairs, test the dish machine’s sanitizer and rinse cycle before returning it to service.
- Remove the “Out of Service” sign and resume normal operation.
Corrective Action
Failure to follow the 3-bay sink procedure may result in corrective action and re-training for sanitation compliance.
