- [ ] 1 tomato, cut in half
- [ ] 2 eggs
- [ ] arugula
- [ ] hummus
mock hollandaise sauce:
- [ ] 1/2 cup mayo
- [ ] 1/2 cup sour cream
- [ ] 1 tsp. lemon juice
- [ ] 1 tsp. yellow mustard
- [ ] 1/4 tsp. paprika
- [ ] a dash of cayenne pepper
directions
- Start to boil water and add in apple cider vinegar.
- Crack an egg into a strainer & drain the egg and discard of any liquid that comes out.
- After water begins to boil, mix the water into a vortex and quickly but gently pour the egg into the center of the vortex.
- The egg will fall towards the bottom of the pot, when it becomes white in color and comes to the top, scoop it out and place it onto a paper towel to soak up the excess liquid.
- Cook the tomato with olive oil in a separate pan.
- Make a mock hollandaise sauce by combining paprika, cayenne, mayonnaise, sour cream, mustard, and lemon juice.
