instructions:
- [ ] 2 sweet potatoes
- [ ] 2 tsp. salt
- [ ] 2 tsp. chili seasoning
- [ ] 1 tsp. crushed red chili pepper flakes
- [ ] 1 tsp. sugar
- [ ] 3 tsp. cornstarch
- [ ] 2 limes
- [ ] 1/2 cup of water
directions:
- zest limes and juice them.
- jab the sweet potatoes with a fork and wrap them in a wet paper towel. microwave them on a plate for 10 mins. once done, they will be cooked. set them aside until cooled.
- julienne sweet potatoes. coat them with a mixture of water, lime juice and cornstarch, then bake on a pan at 425* for 40 mins.
- combine chili powder, lime zest, salt, crushed red chili pepper flakes, and sugar. sprinkle the mixture on the fries.
- (optional) make a 1:1 ratio of ketchup and mayonnaise for a dipping sauce similar to a colombian “pink sauce.”
