- 1 stick butter
- 1 cup sugar
- dab of molasses
- 1 egg
- 1/2 tsp baking soda
- 1 tsp kosher salt (use less if using table salt)
- 1/2 T cornstarch (optional)
- 1 tsp vanilla
- 1.5-2 cups flour
- 1 cup chocolate chips
- Microwave butter until just melted.
- Add sugar, molasses, baking soda, kosher salt, vanilla, and cornstarch. Whisk 30 seconds, rest 2 minutes, and repeat until thickened.
- Add egg and mix.
- Add flour and chocolate chips and mix until just combined.
- Optionally chill 2-72 hours.
- Bake at 350F for 10-15 minutes
- Optional but highly recommended: top with flakey sea salt, if the original cookie is not too salty
