*coolship.io is named for the traditional vessel used for spontaneous fermentation, the Belgian "COOLSHIP" (in Flemish, "koelschip").*
In a coolship, beer wort cools in the open air and is inoculated by ambient microbes which settle in on the wind. Developed over hundreds of years as the "Lambic", "Gueze", and "Flanders" ales of European monasteries, coolship beers have recently begun to emerge worldwide.
Each coolship beer is a unique collaboration, combining the terroir of the local environment with the skills and tastes of its brewers.
Each project of coolship.io follows that same pattern.
