Ingredients
Wet:
- 1 cup (227 g) unsalted butter
- 1½ Tbsp white miso paste
- 1½ cups (300 g) dark brown sugar, packed, dark is key because of molasses
- ½ cup (100 g) granulated sugar
- 1 Tbsp tapioca syrup OR maple syrup
- 2 large eggs, room temp
- 2 tsp vanilla bean paste
Dry:
- 2 cups (240 g) cake flour, spooned & leveled
- 2 Tbsp (≈15 g) nonfat dry milk powder or Malted Milk powder
- 1 tsp baking soda
- ¼ tsp fine salt
Chocolate + finish:
- 1½–2 cups chocolate
- Half chips, half chopped chocolate bar
- Flaky sea salt, (Fleur de sel or Maldons) for sprinkling on top
