There are a few reasons, from most to least important:

Paddle handles VAT tax for me. Stripe doesn't.
Paddle is a merchant of record (like an app store), so I don't have to worry about invoicing to my customers (which is very important for a solo indie hacker like me).
Paddle supports Vietnam, Stripe doesn't.
Paddle handles fraud and risky transactions on their side, I don't have to do anything. Stripe pushes that responsibility to the business owners (me).

Paddle’s transaction fee is 5% + 0.5c, which is quite high, but worth it.
