<aside> ⏱️ Prefer shorter brewing times over longer ones, otherwise more tannines will be extracted an your brew gets bitter. (like with coffee)

<aside> ♻️ The first brew is the longest, the subsequent brews will be much shorter (because the leaf already re-hydrated)

<aside> 🌿 Don't buy the cheap stuff & always choose loose leaf tea

Eastern (Gong Fu aka. Tea Ceremony Method)

• high leaf to water ratio ($\approx\frac{1}{3}$ of the brewing vessel filled with leafs)

  • 5g : 200ml

• multiple short brews

  • a few seconds (~5-15 sec.), pull the leafs out once they start opening

• Gung Fu Method

Western

• low leaf to water ratio

  • 2g : 200ml

• one long brew

  • 60-120 sec.
