Purpose
To ensure every table is fully reset to Waverly Stone standards before the next guest is seated. This includes maintaining a clean, sanitary, and consistent dining environment that reflects attention to detail and readiness for service. Tables should appear freshly set and uniform across the dining room, with no signs of previous use.

All FoH employees.
Process
Clear the Table
- Remove all soiled dinnerware, glassware, silverware, and napkins.
- Dispose of any trash or paper items.
Clean & Sanitize
- Wipe the entire tabletop with a sanitizer solution.
- Lift and wipe under condiment caddies and any décor items.
- Wipe chairs, chair backs, and table edges.
- Ideally, allow surfaces to air dry before resetting.
Replace Service Items
- Replace water glasses and silverware with clean sets.
- Ensure napkins are neatly set per service standard.
Condiment Caddy Check
- Verify ketchup, mustard, salt grinder, and pepper grinder are full, clean, and not sticky. Replace or refill any empty or low items before the next seating.
- Wipe the exterior of each bottle or grinder as needed.
- Align the caddy neatly in the center of the table with other décor. Ensure that any marketing material is neatly displayed.
