2017
While Will was working his way through the ranks as a chef, Matt was also progressing on the front of house side, which lead to the possibility of working together.
The strong desire to cook his own food lead Will to pop ups, the first coming in February 2017 at The Little Bull in Brenchley. Serving a tasting menu of produce lead food that celebrated the best of the local area. Will and Matt wanted to celebrate the wild food and the local produce that is on their doorstep.

At this time Will was still working at the Windmill, but the pop ups allowed him to begin to work more closely with Matt.
Things went from strength to strength with one pop up a month quickly becoming one a week, all over Kent, East Sussex and London. Will & Matt both left their jobs, built a brand and started to grow networks with local farmers, suppliers and producers.
At this time they were renting a prep kitchen and running things out of spare room. Soon they needed to employ someone to keep up with the demand and after building a little pot of cash, they decided to see what was on the market for a permanent home.
