Quick Checklist
- [ ] Clean hands, clear surface, dry napkins
- [ ] Knife and fork aligned, wrapped tight, banded
- [ ] Min 50 rolls per person per night or as posted
- [ ] Full bus tub covered and stored in basement rack
- [ ] Refill upstairs baskets to par
Process
- Prep
- Wash hands. Sanitize table. Stage clean utensils, napkins, and bands.
- Roll
- Place knife and fork centered. Fold and roll snugly. Band once in the middle.
- Store
- Place completed rolls in clean, dry bus tub. Cover when full.
- Restock
- Bring tubs up as needed. Refill host stand and bar baskets to par.
