One of the most common causes of kitchen backup is servers firing all their tickets at once, especially after being double-seated. When two tables are greeted and ordered at nearly the same time, both tickets hit the kitchen simultaneously, creating a spike that compounds across multiple servers. Servers must stagger their ticket fires to give the kitchen breathing room.

The Problem

When a server is double-seated, the natural instinct is to greet both tables quickly, take both orders, and fire them right away. This sends two full tickets to the kitchen within minutes of each other from a single server. Multiply this across several servers and the ticket board stacks rapidly, pushing the kitchen from Green to Yellow or Red in a matter of minutes.

The Rule: Stagger Your Fires

When double-seated or managing multiple new tables, servers should space out their ticket fires by at least 3–5 minutes whenever possible. The goal is to avoid sending more than one full ticket to the kitchen at a time. Be sure to check in with your table quickly and communicate clearly regarding the wait, etc.

Communication

It is always critical to keep a guest informed of what is going on, especially with delays. Check in frequently, offer a complementary item to tide them over, or a discount if things are not good. Always get a manager involved if the guest is unhappy. A table should never leave unhappy and if they do, it is likely because we did not handle the situation to the best of our abilities.

🟢 Green Fire normally but still avoid simultaneous tickets from double-seats. Space fires by 2–3 minutes minimum.
🟡 Yellow Stagger all fires by 3–5 minutes. Hold entree fires if apps are ordered. Check with expo before firing large tickets.
🔴 Red Do not fire new tickets without checking with the kitchen manager or expo. Hold orders and buy time with guests (drinks, bread, conversation). Fire only when cleared.
