Peel garlic cloves. Keep them whole or slice in half if very large.

Dissolve salt in filtered water to create a 2.5% brine.
Layer garlic with herbs, bay leaves, or spices of your choice for added complexity.
Fill jar with garlic and optional aromatics. Pour brine over, leaving 1 inch headspace. Weight down.
Cover with cloth. Ferment at room temperature for 3-4 weeks.
