**Ingredients (**For 6 people)

Salade:

• 500g sweet potato, unpeeled, diced
• Olive Oil
• 400g quinoa
• 200g edamame
• 1 bunch mint, leaves only, chopped
• Salt

Dressing

• Half a tube wasabi
• 3 tbs rice vinegar
• 4 tbs grapeseed oil
• A drizzle of honey
• Salt & Pepper

Instructions

• Place sweet potatoes on an oven tray lined with baking paper. Drizzle with olive oil and toss to coat. Cook at 200°C for 30min, stirring half-way through. Leave to cool.
