**Ingredients (**For 6 people)
Salade:
- 500g sweet potato, unpeeled, diced
- Olive Oil
- 400g quinoa
- 200g edamame
- 1 bunch mint, leaves only, chopped
- Salt
Dressing
- Half a tube wasabi
- 3 tbs rice vinegar
- 4 tbs grapeseed oil
- A drizzle of honey
- Salt & Pepper
Instructions
- Place sweet potatoes on an oven tray lined with baking paper. Drizzle with olive oil and toss to coat. Cook at 200°C for 30min, stirring half-way through. Leave to cool.
