About the Role
The Prep Cook is the foundation that makes every Nettle bowl possible. You work early mornings to make sure all of our proteins, grains, vegetables, and dressings are prepped fresh, portioned correctly, and ready to go before guests arrive. Nettle is rooted in the Mountain West – the trails, the studios, the communities that take their health seriously and their food personally. The craft you bring to the kitchen every morning is what makes that identity real. You take pride in quality, consistency, and keeping a clean kitchen. If you love the craft of cooking and want to be part of a team that takes food seriously, this role is for you.

- Prepare all ingredients for daily service according to Nettle recipes and standards
- Cook proteins, grains, and roasted vegetables to spec
- Make dressings, sauces, and toppings in correct batch quantities
- Label, date, and properly store all prepped items
- Maintain a clean, organized prep kitchen throughout your shift
- Conduct daily inventory checks and communicate low-stock items to management
- Follow all food safety, allergen, and sanitation protocols at all times
- Support the line team during service when needed

- Knife skills and comfort working with fresh produce and proteins
- Strong attention to detail and commitment to consistency
- Ability to work early morning shifts and move quickly in a kitchen environment
- Team-oriented with a low-ego, get-it-done attitude
