WHAT YOU NEED:
- 1x thumb sized ginger root
- 1x half thumb sized turmeric (curcuma)
- 1x lemon (or lime)
- 1x lemon-grass (optional)
- 1x table spoon of honey
- trace of black or cayenne pepper
- 500ml boiled water
- Knife

STEP-BY-STEP GUIDE:
- Boil your water
- Clean and peel the ginger root
- Cut the ginger root into small squares or sticks (the smaller the better)
- Cut the turmeric into small slices or sticks (the smaller the better)
- if available: crush the lemon-grass and cut off a thumb-sized piece
- Put the ginger, turmeric into your teapot/cup
- Add fresh ground pepper
- Fill with boiled water
- Wait until the water cooled down (approx. 5 mins)
- Split the lemon into half and add the lemon juice
- Sweeten with honey at your own pleasure

Do I have to peel the skin?
Ginger skin thickens over time and becomes bitter, so fresh ginger generally tastes better.
Whether to remove the peel or not depends on the way you'll be using it.
Personally: for tea, drinks, tonics, smoothies or marinade, there's no need to peel the ginger if you don’t mind the slightly bitter taste.

💡 Note: You can leave the ginger and turmeric pieces in the water as long as you want and reuse it again for another ginger tea. The longer you leave it, the more spicy it gets. I leave them in the whole time and add them to my smoothies afterwards.
