My guiding principles are:

Minaal Daily 2.0

The Minaal Daily is hands-down the best backpack I've ever owned. It's got a whole bunch of features that make it almost perfect for what I want. It was expensive, but totally worth it. There's a good review here.

I also have a Minaal Carry-On 2.0 which is much bigger. I don't always used this, but if I need to travel with more stuff than I can fit in my daily then I pack the daily inside the Carry-On and I'm good to go.

I have a 2017 MacBook Pro with a couple of little dongles for converting to HDMI and USB-A, plus a Mu One USB-C charger, which folds up super small.
