I've recently begun a love affair with lentils.
This is BIG. I have always been a lentil hater.
I am trying to eat more healthily and recently decided that as a result I should look to incorporating more vegan recipes into my repertoire. And let's face it, it's hard to be vegan and avoid lentils.
Usually, my daughter and I have pizza Friday every other week. I wondered if it would be possible to make a pizza base from lentils. OF COURSE IT IS!
There are literally thousands of lentil pizza base recipes. My first test was this one.
As yet, I have only made the base. I've eaten the base. It's OK taste-wise - definitely not completely offensive. I've yet to actually make a pizza from the base.
I didn't have a cast iron pan so I used a relatively heavy pie dish that I have, and foil lined it.
The texture reminds me of a flat Yorkshire pudding.
My next experiment will possibly be to make mini pizzas in my muffin pan that I can stash in the fridge for quick snacks as I work.
