Micro‑Timings
- Pre‑shift station check: 20 minutes before service
- Board scan for fires and holds: every 2 minutes
- Expo check‑ins: every 10 minutes or as tickets spike
- Closing checklist sign‑off: before clock‑out
Core Responsibilities
- Supervise station cooks and balance workloads
- Master every station and plug gaps during rush
- Keep quality checks tight on taste, temp, and plating
- Run opening and closing for the line
- Train new cooks and document shift handoffs
- Communicate status, issues, and needs to Sous/Chef
