- Rotation: Use round-robin seating (A-B-C-repeat). If a guest requests a specific seat out of order, accommodate when possible but inform the manager if it will result in double-seating. Adjust future seatings to restore balance—prioritize the skipped server next.
- Timing: No server should be seated more than one table every 10–15 minutes. Exceptions may be made with manager approval if a server is fully caught up.
- Double-Seating: Only double-seat if you are confident the server can handle it and it is within pacing limits. Ask a manager if unsure.
- Never Triple-Seat: This significantly impacts guest experience and disrupts pacing for the whole restaurant. Under no circumstance should a server be triple-seated.
- Hold at the Door: It is better to delay seating by a few minutes than to overwhelm servers or the kitchen. Let the guest know: "Short wait for the best experience."
- Use the Pacing Tools: Before seating a party, check the timer and pacing lights. Consult the staffing chart to confirm you are within safe limits.
- Communicate: If you are unsure whether to seat the next table, ask the kitchen or a manager. It is always better to check.
- Log Issues: If there are unusual delays, large party impacts, or pacing overrides, make a note for manager review.
- No Kids at Couches: Ensure children are not seated at couch areas.
- Guest Count: Consult guest count before seating large parties.
- Over Estimate Wait Time: Our goal is to always exceed guest expectations and they start on a better foot if they are seated early rather than late.
