The 14 allergenic substances covered by legislation are:
- eggs
- milk, including lactose
- fish
- crustaceans, such as prawns, crabs, crayfish and lobster
- molluscs such as mussels, whelks, squid, snails or oysters
- peanuts
- nuts, namely - almonds, walnuts, cashews, hazelnuts, pecan, brazil, macadamia, pistachio
- sesame
- cereals containing gluten, namely - wheat, rye, barley, oats
- soya
- celery, including celeriac
- mustard
- sulphur dioxide/sulphates, where added at a level above 10mg/kg or 10mg/L in the finished product
- lupin.
