Step-by-Step: Service Flow
- Read in tickets. Highlight ALLERGY and 86s
- Call fires to stations in brief, specific calls
- Verify each plate: name dish, mods, temp, garnish, cleanliness
- Stage by table. Complete the course. Release to run
- Communicate quotes and delays to FOH. Escalate issues to MoD
Allergy Control at the Pass
- Confirm “ALLERGY – [Allergen]” appears on each item’s ticket
- Isolate on clean tray. Use clean garnish tools and fresh squeezes
- Keep pass area clear. Avoid shared garnish bowls
- Verbally confirm allergy with runner at handoff
