Purpose
To ensure the dish machine is sanitizing properly and meeting required food safety standards during all operating hours.
Frequency
- Twice per day: AM Shift and PM Shift
- Performed before service and mid-shift (or at shift change)
Tool
- ThermoWorks Cloud App → Checklist Name: “Sanitizer Test”
- Test Strips (Chlorine)
Procedure
- Run the dish machine for 1–2 cycles to ensure water and sanitizer are actively circulating.
- Use a fresh test strip according to manufacturer instructions:
- Dip or pass through rinse cycle as directed.
- Compare the strip to the test strip color chart.
- Ensure the test strip is within the proper range.
Recording the Result
In ThermoWorks Cloud → Sanitizer Test
- If sanitizer is within safe range → Select YES → No corrective action needed.
- If sanitizer is not within safe range → Select NO → Immediately perform corrective action below, select the steps taken in the ThermoWorks app, and record resolution in Microsoft Teams.
Corrective Actions (If Test Fails)
If the result is NO
- Notify Manager (select in dropdown)
- Check Sanitizer Supply
- If empty → select Sanitizer Empty → replace jug and prime machine.
- If new jug cannot be installed → select Sanitizer Out of Stock
- Switch to 3-comp sink sanitation until resolved.
