Purpose

To ensure the dish machine is sanitizing properly and meeting required food safety standards during all operating hours.

Procedure

  1. Run the dish machine for 1–2 cycles to ensure water and sanitizer are actively circulating.
  2. Use a fresh test strip according to manufacturer instructions:
    1. Dip or pass through rinse cycle as directed.
    2. Compare the strip to the test strip color chart.
    3. Ensure the test strip is within the proper range.

In ThermoWorks Cloud → Sanitizer Test


Corrective Actions (If Test Fails)

If the result is NO

  1. Notify Manager (select in dropdown)
  2. Check Sanitizer Supply
    1. If empty → select Sanitizer Empty → replace jug and prime machine.
    2. If new jug cannot be installed → select Sanitizer Out of Stock
    3. Switch to 3-comp sink sanitation until resolved.
