Step-by-Step: Service Flow

1. Preheat to spec and confirm humidity
2. Load similar items together. Set probe alarms
3. Pull at core temp. Rest if needed. Label batch time
4. Transfer to hot hold or line per Expo

Station Allergy Controls

• Dedicate hotel pans, racks, and probes for allergy batches
• Label stickers “ALLERGEN ALERT” with time and item
• Avoid shared steam or condensation drip on allergy trays

Setup

• Descale status verified. Water filter indicator checked
