- 300g bulgur
- 800g carots cut
- 100g pitted dates - grossly chopped
- 100g unsalted peanuts
- 1 bunch coriander - leaves finely chopped
- Olive Oil
For the dressing
- 1 garlic clove
- 3cm ginger
- 3 oranges (juice and zest)
- 3 tbp olive oil
