- 500g beetroot - cooked
- 2cm ginger
- 200 ml coconut milk
- 1 Onion
- 400 ml Water
- 1cas Olive oild

- Bread - 2 slices / pieces
- 1 tsp pepitas
- Chives (optional)

PREP
- Bring water to the boil. Peel and chop the onion.
- Dice the beetroot, reserve a few pieces for the dressing.
