• 500g beetroot - cooked
• 2cm ginger
• 200 ml coconut milk
• 1 Onion
• 400 ml Water
• 1cas Olive oild

ACCOMPAGNEMENTS

• Bread - 2 slices / pieces
• 1 tsp pepitas
• Chives (optional)

PREP

• Bring water to the boil. Peel and chop the onion.
• Dice the beetroot, reserve a few pieces for the dressing.
