For the salad
- 400g sweet potato, unpeeled and diced
- 400g basmati rice
- 3 corn cobs
- 2 limes
- 2 bunches coriander, chopped
- 200g red kidney beans, cooked and drained (optional)
- 3 oranges, peeled and sliced (5mm)
- Salt & Pepper
For the dressing:
- 4 avocados
- 2 oranges
- 2 spring onions, finely chopped
- 1/2 tsp turmeric
- a sprinkle of chilli flakes
