Purpose

Ensure safe service for guests with food allergies by standardizing how we identify, communicate, prepare, and document allergy orders.

Core Principles

Step-by-Step: At the Table

  1. Listen and clarify: “What is the specific allergen?” “How sensitive is the guest?”
  2. Repeat back for accuracy and confirm avoidance needs.
  3. Inform the MoD immediately for any severe allergy or uncertainty.
  4. Offer safe options or check with the kitchen before promising anything.
  5. Remind the guest we will document and flag their order end-to-end.

Step-by-Step: Communication to Kitchen

  1. Verbally alert Expo or the station lead before sending the order.
  2. Confirm required precautions: clean pan/tools, change gloves, fresh utensils, separate workspace.
  3. Stay available for questions and be ready to adjust the order if needed.
