From your WordPress dashboard, navigate to Posts and edit the post/project you would like to make a gallery for.
On the post edit screen, in the main content area add a new "Gallery" block.

Select Upload to add images to the gallery.

To add captions, click images in the grid to access the "Write caption..." option

When an image gallery is actively selected, additional options are available on the right. It is recommended that you use "None" for the link option and "Large" for the size option.
NOTE: "columns" is not used for this feature.

NOTE: For mobile screenshots, be sure to use "mobile" in the Additional CSS field of the gallery so that images are forced to display at the proper size.
