Ingredients (~$10, serves 6):
Method: In a large pot, sauté onion, carrots, and celery in a little butter until softened (5 min). Add broth, chicken, thyme, and bay leaf. Bring to a boil, reduce heat, simmer 20 minutes until chicken is cooked. Remove chicken, shred with forks, return to pot. Add noodles, cook 8 minutes until tender. Season to taste.
